Add “Visit Vermont” To Your Bucket List!

As I write this, I am sitting in the living room of a quaint old inn listening to soft guitar music. Very relaxing after a day in the teaching kitchens of King Arthir Flour in Norwich, Vermont. As I gaze out the window, the trees still have a few of the beautiful orange, yellow and red leaves this area is known for at this time of year. About two week ago, the sight would have been breathtaking but now there is just a taste of the beauty and a hint of the winter to come.

For those of you who have never had the opportunity to visit Vermont, I recommend you put it on your bucket list. From the time the plane was making it’s descent onto the runway in Burlington surrounded by water and green of the islands, through the 90 minute drive south and the arrival in this quaint village, I saw nothing but beauty.

And now I am having the experience of learning from the very knowledgeable instructors at King Arthur. The class I am taking is four days long and revolves around getting more whole grains into our baking and our diets. Yesterday we made spelt pitas, whole grain pumpkin bread and cornmeal pancakes. Today we made whole wheat bread (that actually tasted good!), crackers and shortbread. Tomorrow is pizza and chocolate cake — now tell me, can you get anything better than that combination? And it is all going to be healthy because of the whole grains we are using.

So who is taking care of the “kids” (or as Jim affectionately calls them, the “zoo”) — well, my dear husband, of course. As he is busy cleaning litter boxes, feeding, giving meds to Carly, our Golden Retriever, who is not feeling well, and tending to the many things that have to be done around the house, I am soaking up the quiet, the beauty, the joy of being waited on, and the learning experience. Thank you, Sweetheart, for this week! When I return home, I will be baking you lots of wonderful breads!

Next week I will be posting updated photos of Zhaklin’s gorgeous kittens. They have all been reserved and have now been given names by their new pet parents. So you will get to meet Amelia (Amy), Mr. Chipping, Archer and Kittywampus.
